Crust-less Mini Quiche

Spent one of the cooler summer days we’ve had (mid-60’s!) baking for the weekend.

S is SUPER into Starbucks’ sous vide egg bites but after looking into the actual process of sous vide : I settled for a close second.

These muffins are super simple, easy to customize, & a huge hit even with my picky 3 year old.

I LOVE onions, but they aren’t a requirement for these to come out perfectly – like I said : super customizable. Next time I’ll probably add some peppers, tomatoes, different cheese, etc

Ingredients

  • 12 slices deli ham
  • Cooking spray
  • 1/2 onion
  • 1/2 C shredded cheese
  • Salt
  • Pepper
  • 8 eggs
  1. Spray muffin tin with vegetable/cooking oil (I was out and greased it with a bottle of vegetable oil and a napkin and they still came out great)
  2. Line the bottom with deli ham (I used Oscar Meyer Deli Sliced Honey Ham 1 1/2 slices per muffin as they’re relatively thin)
  3. I made 8 muffins so I cracked 8 eggs into a bowl, mixed in half an onion (raw & diced – you can sauté prior if you’d like less crunch) and 1/2 cup of shredded Colby Jack cheese with salt and pepper to taste
  4. Preheat to 375
  5. Bake for 15-20 minutes (until egg is firm on top
